Quick "puff-like" pastry made from three ingredients is a great helper for anyone who wants to bake simply, quickly and without unnecessary effort.

If you’re in the mood for a tart, turnovers or savory sticks, but don’t feel like preparing classic puff pastry, this three-ingredient variant is ideal. No laminating, no complicated chilling – just three common ingredients, a food processor and a few minutes. The result is tender, light and beautifully crisp when baked.

Note: 1 cup = 250 ml.

Preparation procedure

  • Creating the buttery crumb Put the flour into a food processor and add the cold butter cut into cubes. Pulse a few times briefly to form a coarser buttery crumb. At this stage you can add a pinch of salt (for savory recipes) or a little sugar (for sweet ones).
  • Adding the beer Pour in the cold beer and pulse for another 8–10 seconds. The dough quickly comes together into a soft, pliable mass. It is important that the mixture remains cold – this keeps the dough tender after baking.
  • Chilling the dough Turn the dough out onto the work surface, quickly shape into a ball and wrap in cling film. Place in the refrigerator for at least 30–40 minutes.
