A light sheet of puff pastry layered with a delicate lemon cream and soft whipped cream creates the perfect combination of flavors and textures. You can make them in no time, with no rising and no complicated steps – and your family or guests will be delighted.

Ingredients

For the pastry:

1 roll of puff pastry (sheet pastry)

For the cream:

400 ml milk
4 egg yolks
zest of 1 organic lemon
90 g granulated sugar
30 g cornstarch (2 tablespoons)

To finish:

200 ml heavy cream for whipping

Preparation procedure

Dough preparation Preheat the oven to 200 °C (fan 180 °C). Unroll the puff pastry onto a baking sheet lined with parchment paper, prick with a fork so it doesn't puff up. Bake for 20 minutes until golden, then let cool and cut into 8 equally sized rectangles.
Cooking the cream In a medium saucepan bring 350 ml of milk together with the lemon zest to a gentle simmer. Meanwhile, in a bowl whisk the remaining 50 ml of milk with the starch, egg yolks and sugar into a smooth paste. Slowly pour the hot milk into the egg mixture, stirring constantly, return to the saucepan and cook over low heat until the cream thickens. Pour the cream into a clean bowl, cover with cling film directly on the surface (this prevents a skin) and let cool completely.
Whipping the cream and assembly Whip 200 ml of cream until stiff. Briefly stir the cooled cream to loosen it, and fill half of the pastries. Top with a layer of whipped cream and cover with the second sheet of puff pastry.
Chilling and serving Let the assembled cream slices rest in the refrigerator for at least 30 minutes so the layers meld. When serving, you can lightly dust the cream slices with powdered sugar.
