  • Preparation of the sponge: Whip the egg whites into stiff peaks. Gradually add the sugar, yolks and water and keep whisking. After turning off the mixer add the flour, baking powder and cocoa. Gently mix, pour into a pan (36×24 cm) lined with baking paper and bake at 180°C for about 30 minutes. After baking let the sponge cool.
  • Preparation of the cherry jam: Put the cherry jam into a pot and, stirring constantly, bring to a boil. After taking it off the heat add the cherry jelly, stir so the jelly dissolves, and let cool.
  • Preparation of the cream: Whip the cream with the powdered sugar until firm. Pour 1/3 cup of cold water over the gelatin and let it swell. Then heat it briefly in the microwave until liquid. Mix it with one tablespoon of cream, stir well and add to the whipped cream. Mix the cream thoroughly.
  • Assembling the cake: Place the sponge back into the pan with the paper. Spread the cream over the cooled sponge. On top, spread the chilled cherry jam with the jelly. Put the cake in the refrigerator to set, ideally overnight.
