- Preparing the dough: Beat the egg whites to stiff peaks. Gradually add the sugar and mix until the whites are stiff. Fold in the ground walnuts and the chopped walnuts. Spread the mixture onto a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C for about 20 minutes. Let cool.
- Preparing the cream: Whisk the egg yolks with the sugar over a bain-marie for about 10 minutes, until the mixture thickens and becomes creamy.
