A fragile nut sponge, delicate coffee cream and chocolate glaze create a combination of flavors that doesn’t get tired even after years. This traditional recipe from Alena Borchová will fill the kitchen with aroma and delight anyone who loves honest homemade sweets.

Preparation procedure

  • Dough preparation: Weigh the egg whites, whisk them with a pinch of salt to stiff peaks and gradually add the granulated sugar. When the mixture is smooth and glossy, gently fold in the ground nuts and plain flour with a wooden spoon.
  • Baking: Line a baking sheet measuring 41 × 33 cm with parchment paper and lightly dust it with powdered sugar. Spread the batter evenly and bake at 200 °C for about 7–8 minutes. After baking, peel the sponge off the paper and, once cooled, cut it into three equal strips.
  • Cream preparation: Make a light roux from the butter and plain flour. Pour in the milk mixed with instant coffee and sugar and cook into a thick custard. Let cool. Then beat in the softened butter and flavor with rum.
  • Filling and shaping: Spread each strip of sponge with the cream and roll lengthwise into a roulade. Put the roulades in the fridge for a while to firm up.
  • Finishing: Cut each roll into five identical relay cookies. Melt the cooking chocolate together with the Cera and a drop of oil. Dip the ends of the relay cookies into the glaze and let set.
