Preparation procedure

  • Dough preparation Whisk the egg whites with 4 tablespoons of sugar until stiff peaks form. In another bowl beat the yolks with the remaining sugar, add the water, the flour mixed with the baking powder and cocoa. Finally, gently fold in the beaten egg whites. Spread the batter evenly on a baking tray lined with parchment paper and bake in a preheated oven at 180 °C for about 20 minutes. After baking, let it cool.
  • Cream preparation Mix the milk with the all-purpose flour, granulated sugar and vanilla sugar and, stirring constantly, cook a thick pudding. Let it cool. Meanwhile, beat the butter with the powdered sugar until fluffy and gradually whisk in the cooled pudding.
  • Assembling the Russian Hats From the cooled cake cut out circles and sandwich them with the prepared cream. Spread cream on the sides of the cookies and roll them in coconut.
  • Chocolate glaze Melt the chocolate with the butter and oil in a double boiler. Pour the chocolate glaze over the top of each hat and let it set.
