These honey crescents are a great reminder of childhood, when they may have been baked by your grandmothers or mothers. It’s a simple recipe with a delicate honey dough and chocolate tips, which you can additionally dip in coconut for an even more attractive appearance. Preparation procedure
- Preparing the sugar syrup: On low heat, mix the water with the sugar and bring to a boil. Once the sugar dissolves, remove the mixture from the heat and let it cool. You'll have a sugar syrup to which you add the honey, cloves and cardamom. Let the mixture sit for a while to release the spices' aroma, then remove the cloves and cardamom.
- Preparing the dough: In a large bowl, mix the egg yolks, butter and the prepared syrup. In another bowl, mix the flour, salt, baking soda and cinnamon. Then combine both mixtures and work into a firm dough. Wrap the dough in cling film and let it rest for an hour in a warm place.
- Shaping and baking the crescents: Roll the dough into a log and cut thin slices from it. From these slices, shape crescents and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 170 °C for 15–20 minutes, until the crescents turn golden.
- Dipping in chocolate: Melt the dark chocolate in a bain-marie, which you can flavor with cognac. Dip the ends of the baked crescents into the chocolate and, if desired, you can also roll them in coconut. Let the chocolate set and serve the crescents.
