Štědrák is the king of festive cakes. In one slice four classic flavors meet – plum jam, poppy seeds, nuts and apples – enclosed in a tender buttery pastry with a dash of white wine. The cake needs to rest after baking so the layers fully meld; the reward is a breathtaking aroma and taste.

Preparation procedure

  • Dough In a bowl mix the flour, powdered sugar, salt and baking powder. Add the egg yolks and cold margarine in pieces, break up with your fingers. Pour in the wine and quickly work into a smooth dough. Wrap in cling film and chill for 30 minutes.
  • Fillings Poppy seed / walnut: Divide 150 ml of wine into two small saucepans, add 100 g sugar and 50 g raisins to each, heat until the sugar dissolves. Stir the poppy seed into one and the walnuts into the other; stir until combined and let cool. Apple: Mix the grated apples with the lemon juice, honey, cinnamon and cloves. Squeeze out any excess juice well.
  • Layering Divide the dough into 4 equal parts. Roll each into a sheet the size of the pan (square 24 × 24 cm or a baking dish approx. 25 × 30 cm) lined with baking paper. 1st sheet: spread half the plum jam, then spread the walnut filling. 2nd sheet: spread the remaining plum jam, then spread the poppy seed filling. 3rd sheet: spread the apple filling. 4th sheet: place on top, prick the surface with a fork and brush with the beaten egg.
  • Baking Bake in a preheated oven at 180 °C for 50–60 minutes, until a deep golden color.
  • Resting and serving Let the cake cool completely, ideally overnight. Dust with powdered sugar before slicing.
