Many people avoid liver because of its pronounced taste or specific texture. However, this recipe shows that even liver can be tender, juicy and well-balanced in flavor. With the right marinade and gentle preparation you get a dish that tastes good even to those who claim they don’t like liver.

  • Cleaning and preparation of the liver Thoroughly wash the liver and soak for 15–20 minutes in cold water to remove blood and any bitterness. Then pat it dry with a paper towel and cut into smaller pieces.
  • Marinade for tenderness In a bowl whisk the egg with salt, sugar, baking soda and crushed garlic. Add the chopped liver and mix well so that everything is coated in the marinade. Let them rest in the refrigerator for at least 2 hours, ideally overnight – this will make them exceptionally tender after cooking.
  • Frying Finely chop the onion and sauté until golden in a small amount of oil. Set it aside. Coat the marinated liver in flour and fry in heated oil for about 3 minutes on each side. Do not press them down in the pan – this way they'll remain juicy. Finally add the sautéed onion, cover with a lid and simmer for another 5 minutes over low heat.
  • Serving Serve the tender liver with: mashed potatoes, cooked rice with butter, a fresh vegetable salad, or with pickled cucumbers.
