Preparation procedure
- Preheat the oven to 180 °C. Grease the baking sheet with butter so the cake doesn't stick.
- In a bowl, combine the quark with the sour cream. Add the softened butter, eggs, flour, sugar, and lemon zest. Mix everything thoroughly until smooth.
- Spread the batter evenly on the prepared baking sheet with higher sides. Then gently tap the sheet several times on the kitchen counter to remove air bubbles.
- Place the cake in the preheated oven and bake at 180 °C for 25-30 minutes. During baking the cake will puff up, but it will sink slightly after being removed from the oven — that's normal and doesn't affect the taste.
- After baking you can brush the cake with apricot jam and sprinkle powdered sugar. However, it's also great on its own, without any toppings.
