Desserts have a magical ability to lift our mood and this quark-chocolate pastry is an ideal example. It is delicious, visually appealing and yet simple to prepare. Your guests will be enchanted not only by the taste but also by the appearance of this masterpiece.

Preparation procedure

  • Dough: In a saucepan, heat the milk, cocoa, sugar and butter. Cook the mixture until all the ingredients melt and combine. Then remove from the heat and let cool. Add the flour, baking powder and eggs to the cooled mixture. Mix with a whisk or a mixer on low speed. Line a baking pan with parchment paper or foil and pour the batter evenly into the pan. Bake in a preheated oven at 180 °C for about 25 minutes. After baking, let the cake cool, then remove it from the pan.
  • Filling: Beat the butter with the powdered sugar and yolks. Gradually add the quark, cream and flour until the mixture achieves a smooth consistency. Add the vanilla extract and the whipped egg whites. Mix well and place in the refrigerator to chill.
  • Assembling the dessert: Cut the cooled chocolate cake into 10 even strips. Line the pan with plastic wrap or parchment paper and begin placing the strips of cake with even gaps between them. Pipe the quark filling between the individual strips of cake. Proceed in layers, applying filling between the first layer of cake and then adding the second layer of cake.
  • Glaze: Melt the chocolate and butter in a water bath. Spread it over the entire cake and put it in the refrigerator for 30 minutes to set. If you wish, you can decorate the cake instead of glaze with grated chocolate or use powdered sugar with a paper stencil.
