I bake it at least twice a month – not only because it’s simple, but mainly because it’s always eaten down to the last crumb. Preparation procedure

  • Preparing the dough: Place the flour, sugar, a pinch of salt and the cold butter in a bowl. Use your fingers to form a crumbly mixture, then add the egg and lemon juice. Quickly work into a smooth dough, wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  • Preparing the apple filling: Peel the apples, remove the cores and slice them. In a bowl, toss them with powdered sugar, cinnamon, vanilla sugar and cornstarch. If the apples are very juicy, add a little more starch.
  • Handling the dough: Roll out two-thirds of the dough on a floured surface and transfer it to a pie tin (approx. 24 cm diameter). Prick the bottom several times with a fork. Keep the remaining dough for the top of the pie or to make a lattice.
  • Filling and shaping: Spread the apple filling over the dough and cover it with the remaining dough or a lattice. Press the edges so they don't come apart during baking. Brush the top with beaten egg, which will give the pie a beautiful golden color.
  • Baking: Bake in a preheated oven at 180 °C for about 45 minutes, until the pie is golden and the filling starts to bubble. After baking, let it rest for at least 20 minutes so the filling can set.
