  • Preparing the vegetables Slice the cucumbers into thin slices. Grate the carrots coarsely or cut into rounds. Slice the onions into half-rings, shred the cabbage finely. Cut the peppers into thin strips, the tomatoes into smaller pieces. Put all the vegetables into a large bowl, add the chopped herbs.
  • Marinating Add the sugar, salt, oil, and vinegar. Stir the mixture thoroughly, cover, and let stand for 3 hours in a warm place to release its juices.
  • Filling jars and sterilization Prepare sterilized jars. Evenly divide the salad along with the released juice into the jars. Close the lids and sterilize in a water bath for 20 minutes from the boiling point. After canning, wrap the jars in a blanket and let them cool.
