It’s made from just one egg, walnuts and a delicate vanilla cream, yet it tastes absolutely luxurious. It’s moist, beautifully nutty and, thanks to the pudding cream, pleasantly light. It pairs perfectly with coffee, for family celebrations and as a quick dessert for guests.

  • Preparing the dough Whisk the egg with the granulated and vanilla sugar until light and frothy. Gradually pour in the oil, milk and mix briefly. Add the ground walnuts, the semi-coarse flour mixed with the baking powder and work into a smooth batter.
  • Baking Grease a pan measuring approximately 20 × 30 cm with oil and dust with flour. Spread the batter evenly and bake in an oven preheated to 180 °C for about 25 minutes. After baking, let the cake base cool completely.
  • Preparing the cream Cook a thick pudding from the milk, sugar and pudding powders. Let it cool completely. Whip the butter until fluffy and gradually beat in the cooled pudding by spoonfuls until a smooth cream forms.
  • Finishing the cake Spread the cream evenly over the cooled walnut base. Sprinkle the surface with grated dark chocolate or fine shavings. Chill the cake in the refrigerator for at least 30 minutes to set.
