Walnut mini cakes are a classic that never disappoints. A crisp cocoa-and-walnut dough, inside a delicate buttery-walnut cream with a drop of rum and on top chocolate with a whole nut. This confectionery is not only beautiful to look at, but above all exceptionally tasty and festive. Don’t forget to let them rest for a few days – that’s when they soften and the flavors meld perfectly.

Preparation procedure

  • Dough preparation Using your fingers, work the flour, powdered sugar, butter and ground walnuts into a crumbly mixture. Add the yolks, cocoa and cinnamon and work into a smooth non-sticky dough. Form into a disc, wrap in cling film and let rest overnight in the refrigerator.
  • Shaping and baking The next day divide the dough into two portions and roll each out into a sheet 3–4 mm thick. Cut out circles (or other shapes) and transfer them to a baking tray lined with baking paper. Bake at 170 °C for 10–15 minutes, until they are lightly golden. Let cool.
  • Cream In a bowl combine the softened butter, nuts, powdered sugar, jam and a little rum. Whip everything into a smooth cream.
  • Assembling the cookies Put the cream into a piping bag and pipe onto the bottom half of each circle. Top with another circle and press lightly. Put the prepared cookies in the fridge to chill so the cream sets.
  • Chocolate coating Dip the tops of the cookies in slightly cooled chocolate glaze. Decorate each piece with a whole nut and leave to set in a cool place.
