Preparation procedure

  • Preparing the dough: In a bowl, mix the flour, sugar, salt and ground nuts. Add the cold butter and use your fingers or a mixer to create a crumbly texture. Work in the egg yolk and quickly bring together into a smooth dough. Wrap and refrigerate for at least 2 hours, ideally overnight.
  • Cutting out: Divide the dough into two portions, roll each out to a thickness of 3–4 mm and cut out ovals. Transfer them to a baking sheet lined with parchment paper.
  • Baking: Bake at 170 °C for 8–10 minutes, until they begin to lightly brown at the edges. Let cool completely.
  • Cream: Beat the egg whites with the powdered sugar to stiff peaks. Then gradually beat in the softened butter and, optionally, the vanilla extract. Work into a smooth, airy cream.
  • Assembling: Always sandwich two cookies with a layer of cream about 5–7 mm thick.
  • Finishing: Melt the chocolate in a bain-marie and stir in a few drops of oil for shine. Dip or brush each oval with chocolate and decorate with a walnut half. Allow to set thoroughly.
