The combination of cream, butter and yeast gives the dough tenderness and flakiness, the tub quark filling holds its shape and is pleasantly moist.

Preparation procedure

  • Making the dough: Crumble the yeast into a bowl, sprinkle with sugar, pour in the lukewarm milk and stir. Immediately add the cream, egg yolks, both types of flour, salt and the softened butter/fat. First mix with a wooden spoon, then quickly work by hand on a board into a smooth, pliable dough.
  • Shaping: Immediately roll the dough (without proofing) on a lightly floured surface into a sheet about 3–4 mm thick. Cut squares with a knife or pastry wheel.
  • Filling: In a bowl, mix the quark, egg yolk, rum, vanilla sugar, pudding powder and powdered sugar. Add rinsed and dried raisins. The filling is thick and easy to portion.
  • Folding: Place a teaspoon of filling in the center of each square, bring opposite corners together to form a pouch and press firmly. Transfer to a baking sheet lined with parchment paper.
  • Baking: Bake immediately without proofing and without egg wash in an oven preheated to 170 °C for about 20 minutes until golden.
  • Finishing: While still hot, lightly drizzle the turnovers with rum and immediately dust with powdered sugar. Let cool briefly on a wire rack.

Total preparation time: 45–55 minutes (20 minutes dough + 15–20 minutes shaping + 20 minutes baking)
