This yeast cake combines four beloved flavors – delicate quark, fragrant plum jam, ground poppy seeds and crunchy crumble. Preparation procedure

  • Preparation of the starter (10 min) Pour 50 ml lukewarm milk into a bowl, add a teaspoon of sugar and crumble in the yeast. Leave in a warm place until the starter begins to foam (5–7 min).
  • Making the dough (10 min) In a large bowl mix the flour, egg yolks, oil, mayonnaise, sugar, salt and lemon zest. Pour in the risen starter and the remaining milk. Work into a smooth, non-sticky dough.
  • Dough rising (60–75 min) Cover the bowl with a cloth and let the dough rise in a warm place until it doubles in volume.
  • Preparing the fillings and crumble (15 min) Plum jam: Mix with rum and cinnamon. Quark (tvaroh): Beat the quark with the eggs, sugar and a little milk until smooth. Crumble: Work the flour with the sugar and butter by hand until a crumbly mixture forms.
  • Assembling the cake (5 min) Grease a large baking tray with oil and dust with flour. Spread the risen dough evenly over it up to the edges. Spread a layer of plum jam over the dough, then spread the quark filling, sprinkle with poppy seeds and finally the crumble.
  • Baking (30–35 min) Preheat the oven to 180 °C (convection 160 °C). Place the cake in the oven and bake until the edges start to turn golden and the crumble is crisp.
