  • Preparing the starter In a bowl, mix lukewarm milk with the yeast and a tablespoon of sugar. Let stand for 5–10 minutes until the starter has nicely risen.
  • Mixing the dough Sift the flour into a large bowl. Add the remaining sugar, a pinch of salt, the risen starter, the two beaten eggs and the softened butter cut into cubes. Mix and work into a smooth, non-sticky dough.
  • First rising Cover the dough with a clean cloth and let it rise in a warm place for 60 minutes, until it doubles in volume.
  • Shaping and filling Divide the risen dough into 15 equally sized pieces. Roll each piece into a disc, place a teaspoon of jam in the center. Bring the edges of the disc together or fold them so that a closed pouch forms, and transfer to a baking sheet lined with parchment paper.
  • Second rising and brushing Let the buns rise under a cloth for 10 minutes. Meanwhile beat the remaining egg with a little milk and brush the buns with this mixture.
  • Baking Bake in an oven preheated to 180 °C for about 25–30 minutes until golden.
  • Finishing After removing from the oven, let the buns cool slightly and, to taste, sprinkle with powdered sugar.
