Preparation of the cream: In a saucepan, mix the sugar, vanilla sugar and cornstarch, add the egg yolks and whisk thoroughly. Pour in the milk and, stirring constantly, cook until you have a thick cream. Once it's done, pour it into a bowl, cover with plastic wrap and let cool.
Preparation of the dough: In a bowl, mix the flour with the sugar, vanilla sugar and yeast. Pour in the warm milk, add the melted butter and the egg whites. Mix everything thoroughly and work into a fluffy dough. Cover the dough with plastic wrap and let it rise for 1 hour.
Shaping the snails: Transfer the risen dough to a floured work surface, roll it into a rectangle and spread the cooled cream evenly. Then roll the dough into a log and cut into wider snails using a thread. Arrange them next to each other on a baking sheet lined with parchment paper. Let them rise for another 20 minutes.
Preparation for baking: Make a slit in each snail with a skewer and brush the surface with the mixture of the beaten egg yolk and milk.
Baking: Bake the snails in a preheated oven at 180 °C for 30–35 minutes, until they gain a beautiful golden color.
