Preparation procedure

  • Preparing the zucchini (10 min + 15–20 min resting) Wash the zucchinis and slice into rounds about 5–7 mm thick. Salt, pepper and let them "sweat" for 15–20 minutes. Then pat the slices dry with a paper towel.
  • Three-layer breading with cheese (5 min) Prepare three bowls: flour; eggs whisked with cheese, herbs and paprika; breadcrumbs. Coat the zucchini slices in flour, dip into the egg-cheese mixture and finally into the breadcrumbs. Press the breadcrumbs lightly.
  • Frying (15 min) Heat a medium layer of oil in a pan. Fry the zucchinis for 4–5 minutes on each side until golden. Place the cooked pieces on a paper towel.
  • Garlic dip (2 min) Stir the yogurt/sour cream with the garlic, salt and chopped dill/chives.
  • Serving Serve hot with the dip and sliced pickled cucumbers.
