This zucchini-chocolate cake is ready in no time, wonderfully moist and you can hardly taste the zucchini. It’s a great quick addition to your menu when you want to use up extra zucchini and still enjoy a chocolate dessert.

Preparation procedure

  • Preparing the zucchini Grate the zucchini finely, place it in a clean towel and squeeze well so the batter isn't too wet.
  • Mixing the batter In a bowl, mix the flour with the baking powder, vanilla sugar, cocoa and cinnamon. Stir in the sugar. Add the eggs, oil and grated zucchini and mix well. If you like, add raisins or nuts.
  • Baking Line a baking tray with parchment paper and pour the batter evenly over the surface. Bake in a preheated oven at 180 °C (fan 160 °C) for 30 minutes until golden. For a smaller tray, bake a little longer at 170 °C.
  • Finishing After removing, let the cake cool slightly. Spread a thin layer of jam over it. Melt the chocolate with the sour cream in a double boiler or microwave and spread the tasty glaze evenly over the surface.
