- Wash the zucchini thoroughly, because we will need it with the skin on.
- Cut it lengthwise in half and then we will not cut it with a knife but with a vegetable peeler. Using it, gradually separate thin strips of zucchini until you use up both pieces.
- Clean the carrot as well and either cut it into very thin strips or use the peeler the same way to make julienne.
- Then prepare a pan and heat the olive oil in it.
- Then add the zucchini noodles to the pan and fry for about a minute and a half, stirring occasionally.
- Then add the carrot noodles to them and sauté the same way for about a minute and a half. Stir from time to time.
- Then slice the garlic into very thin slices and add it to the vegetables.
- Also add salt, pepper and coriander. Mix everything thoroughly.
- Then cover the pan with a lid and let it sit off the stove for about a minute so that all the flavors permeate the vegetables.
- Finally, you can drizzle a little lemon juice on top.
