  • Preparing the dough In a bowl, mix the flour and salt. Make a well in the center and add the yeast, milk and oil. Pour in the warm water and stir with a fork until the ingredients come together.
  • Kneading When the dough becomes too stiff to mix with a fork, continue with your hands. Knead for about 10 minutes until a smooth, elastic ball forms. If necessary, lightly dust with flour.
  • Proofing the dough Cover the dough with a clean cotton towel and let it rise in a warm place for 2–3 hours, until it has doubled in size.
  • Shaping the pancakes Divide the dough into four portions, shape each into a ball and let them rise for another hour. Then flatten each ball with your hands or a rolling pin.
  • Frying Heat oil in a pan and fry the pancakes on both sides until golden – approximately 5–6 minutes in total. After frying, place them on paper towels to absorb excess fat.
