Return to your childhood and treat yourself to a classic sweet that never gets old. This grandma’s strudel recipe will show you how to make juicy strudels with two types of fillings – poppy seed and walnut. Ideal with coffee or tea, easy to prepare and fragrant from start to finish.

Preparation procedure

  • Preparing the starter In a small bowl mix the yeast, 1 tablespoon sugar, 1 tablespoon flour and 100 ml lukewarm milk. Let rise for 10–15 min until the starter foams nicely.
  • Preparing the dough In a large bowl combine the risen starter with the flour, yolks and the remaining sugar. Work into a smooth, non-sticky dough. Wrap in cling film and let rest in the fridge for 30 min.
  • Poppy seed filling In a saucepan bring 300 ml milk with the honey, sugars and lemon zest to a boil. Stir in the ground poppy seeds and egg yolks, briefly simmer (1–2 min). Let cool.
  • Walnut filling In a saucepan heat 50 ml milk, add the sugar, lemon zest, raisins and walnuts. Simmer for 1–2 min and let cool.
  • Shaping the strudels Divide the dough into 4 pieces. Roll each piece into a thin rectangle, spread the chosen filling, roll up tightly and place on a baking sheet lined with parchment paper.
  • Rising and baking Brush the strudels with yolk and let rise for 30 min in a warm place. Then brush with egg white and bake in an oven preheated to 150 °C for about 30–40 min, until golden.
