Preparation procedure

  • Preparing the nut dough: Place the egg whites, sugar and a pinch of salt into a bowl set over a water bath and whisk until the sugar is completely dissolved and the mixture reaches a temperature of about 72 °C. Then transfer the mixture to the bowl of a stand mixer and whip into stiff, glossy peaks (about 10 minutes). Finally fold in the ground nuts by hand so the meringue remains airy.
  • Shaping and baking: Transfer the dough into a piping bag and pipe small crescents onto a baking sheet lined with parchment paper. Bake in an oven preheated to 190 °C for approximately 5–6 minutes, then turn off the oven, crack the door open and let them dry for another 10 minutes. Let cool.
  • Coffee cream: Place the yolks, whole egg and sugar into a bowl set over a water bath. Heat and whisk until the mixture reaches a temperature of 72 °C. Transfer to a stand mixer and whip on high speed for about 10 minutes, until a fluffy, room-temperature foam forms. Then gradually beat in the butter until a smooth cream forms. Finally fold in the ground coffee by hand.
  • Filling the crescents: Place the cream into a piping bag fitted with a decorative tip and pipe onto the prepared crescents. Refrigerate for at least 4 hours (ideally overnight).
  • Chocolate glaze: Melt the chocolate in a water bath with the oil and let cool to room temperature. Dip each crescent into the chocolate and place on a wire rack until the glaze sets.
