This light peach cake combines a fluffy sponge batter, a delicious peach filling and a rich layer of whipped cream sprinkled with grated chocolate. It is ideal for hot summer days when you want a sweet treat that also refreshes pleasantly.

Preparation procedure

  • Preparation and baking of the dough Preheat the oven to 180 °C. In a bowl, beat the eggs with the granulated sugar until pale and frothy. Gently fold the sifted flour with the starch and baking powder into the foam. Spread the batter onto a baking sheet lined with parchment paper. Bake for 25–30 minutes, until the cake is lightly golden and springy to the touch. Let cool.
  • Peach filling Drain the peaches and cut into cubes. Mix half of the syrup from the can with the pudding powder and powdered sugar. Bring the remaining syrup to a boil, add the butter and peach jelly, stir until dissolved. Stir in the chopped peaches, simmer briefly. Pour in the mixed pudding, cook, stirring constantly, until thickened. Spread the hot mixture evenly over the cooled cake. Let cool completely.
  • Whipped cream and finishing Whip the cream with powdered sugar to stiff peaks. Spread the whipped cream over the cooled peach filling and smooth. Sprinkle the surface with grated chocolate. Refrigerate to set for at least 3 hours.
