Preparation procedure

  • Marinating In a bowl, mix all the ingredients for the marinade. Clean the pork ribs, optionally lightly score the fattier parts in a crosshatch. Place the meat in a sealable bag or container, pour over the marinade, mix thoroughly. Let rest at least 2 hours in the refrigerator, ideally overnight.
  • Baking Let the ribs sit at room temperature for 30 minutes before baking. Preheat the oven to 200 °C. You can sear the ribs quickly in a pan first, or place them directly on a baking sheet with a rack. Bake 25–30 minutes. Halfway through baking, brush with the remaining marinade. The ribs are done when they are golden and the internal temperature reaches 63–65 °C.
  • Resting and serving After baking, let the meat rest 5–10 minutes under foil. Slice and serve with your favorite side dish (potatoes, vegetable salad, fresh bread, etc.).
